The chef de partie provides a service to the kitchen department. The chef de partie is fully responsible for the preparation of assigned menu items to set standards and carrying out assigned kitchen duties and is accountable to the Head Chef for these.
The Sommelier position is based in the Premier Wine Direct and involves all aspects of the wine service, stock and control within the lodges. The person filling this role needs to have a passion for wine and a solid basic knowledge of wine.
