Key Focus Areas:
Be fully responsible for the smooth operation of all administrative duties in the
kitchen department whilst the Executive chef is away;
This includes ordering of stock, menus, emails, invoicing as well as staff
management in line with the code of conduct and disciplinary code;
Preparation and portioning food, monitoring quality of dishes at all stages of
preparation and presentation;
Check the cleanliness and operation of all kitchen equipment as well as all
areas before production runs. Need to comply with OHSA regulations;
Employee Management: ensure that staffing levels are correct in conjunction
with the General Manager and to agreed standards;
Review work procedures and operational problems.
